Cookies — from shortbread to chocolate chip to soft sugar — are a longstanding holiday tradition, said to be rooted in the Depression era. Parents, wanting to encourage generosity in their children during the harsh time, would gather ingredients, bake, and share with neighbors. The JCR holiday cookie exchange began 15 years ago (with the inception of the company) and has continued every year since. How we look forward, each December, to sharing our JCR family cookie recipes. Following is this year’s batch, including Lemon Ricotta Cookies with Lemon Glaze from my friend, Eileen.
